Absinthe
Before trying to uncover the mystique and entrancing effects of absinthe, it may be easier to first start of with some facts.  Absinthe is a potent, herbal liquor, historically ranging from 55-75 percent (up to 150-160 proof).  It is traditionally distilled from anise, fennel, hyssop, juniper, chamomile and/or other herbs, depending on the distillers preference.  However, the more noteworthy herbal ingredient is called wormwood, with a scientific name of artemisia absinthium (hence the name absinthe).  

Absinthe is traditionally imbibed by means of a ritual preparation. This consists of chilled water, a spoon, a glass, a sugar cube, and of course absinthe.  The water, usually contained in a glass fountain, is slowly dripped over the sugar cube which sits on top of a spoon and into the glass of absinthe.   Upon this interaction of water and absinthe, the clear absinthe captivatingly transforms into a milky white liquid, an effect called louching.  During this process, essential oils are also precipitating, releasing aromas and subtle flavors.

Brandy

Derived from the Dutch word brandewijn or “burnt wine,” brandy is a spirit produced by distilling wine, the wine having first been produced by fermenting grapes. Brandy contains 36%-60% alcohol by volume and is typically consumed as an after-dinner drink. While some brandies are aged in wooden casks, most are colored with caramel coloring to imitate the effect of such aging. Brandy can also be made from fermented fruit, like apples and peaches.

Gin

Gin is a spirit flavored with juniper berries. The most common style of gin, typically used for mixed drinks, is London dry gin. London dry Ggin is made by taking a neutral grain spirit and redistilling after the botanicals are added. In addition to juniper, it is usually made with a small amount of citrus botanicals like lemon and bitter orange peel. It may also include anise, angelica root and seed, orris root, licorice root, cinnamon, coriander, and cassia bark.

Mezcal & Tequila

A Mexican distilled spirit made from agave (maguey) plants. Its production and consumption is popularly associated with the Mexican state of Oaxaca. There are many different species of agave plant, and each produces a different flavor of mezcal. The term mezcal generally refers to all agave-based distilled liquors that are not tequila (a mezcal variant allowed to be made only from the blue agave plant, usually in the town of tequila and the surrounding region of Jalisco). 

Like it’s cousin mezcal, tequila is made by distilling the fermented juice of agave plants. By Mexican law, the tequila regularly council requires that tequila be made from at least 51% weber blue agave and must be produced in the designated geographic area in and near the state of Jalisco. The oldest existing distillery in the town of Tequila was granted charter by the spanish government in 1795, a local padrone named Jose Cuervo.
